The history of this precious LENTIL is very ancient. Cultivated since the beginning of time in the central Italian region of Umbria, on the plain of Castelluccio at Norcia (Nursia) at an altitude of1,500 metres.

This particular Lentil posseses high nutritional values: rich in protein, vitamins, fibre and mineral salts it is ideal for those who need a diet rich in iron, potassium and phosphorus.

Another characteristic of the Casteluccio Lentil is its very thin and soft peel which allows it to be cooked directly without having to leave it to soak in water, reducing thus cooking time.

TRADITIONAL RECIPE for Castelluccio di Norcia Lentil Soup

Ingredients for 4 persons:

400 gr. Castelluccio di Norcia Lentils, 1 lt of water, 1 stalk of celery, 1 clove of garlic, salt and pepper

Preparation:

Pour the lentils into an earthenware pot, add water, celery and garlic. Cook for roughly 40 minutes. Towards the end add salt and bread croutons rubbed with garlic, a pinch of salt and pepper and a drop of extra virgin olive oil.
