Sustainable Haute Cuisine
Terre Francescane is proud to be purveyors not only Michelin-starred restaurants but also establishments of excellence such as the Ratanà restaurant in Milan, located next to the iconic “Bosco Verticale” (vertical forest) skyscrapers.
Ratanà is one of the first restaurants in Italy designed to make a difference and contribute to the development and promotion of a sustainable gastronomic culture.
It offers Milanese and Lombard cuisine revisited with the creativity of Chef Cesare Battisti and his team.
The menu interprets the gastronomic tradition of Lombardy on the one hand and the freest expression of modern cuisine on the other. Respect for the raw ingredients and minimal contamination between different flavours are their starting point. The result is the aroma of your dish.
‘Cesare Battisti is perhaps the perfect model of a chef according to Carlo Petrini [founder of Slow Food]: a person capable of bringing together those who live in the countryside and those who live in the city, and he does so with a smile worthy of the theatre.’
CIT from Identità Golose, Tokyo Cervigni
Cesare Battisti, born in Milan in 1971, is Chef and owner at Ratanà and is considered one of the most representative chefs of traditional cuisine revisited and of quality, attentive to the use of excellent raw ingredients from small producers and focused on the themes of food sustainability, but also economic, environmental and social sustainability.
